If you love peppers, this dish gives you two great ways to enjoy them—rice, corn, nuts, and cheese are loaded into halved peppers and then baked on top of a zesty jalapeño tomato sauce. If you prefer a little less heat, remove the seeds from the jalapeño first.

1 jalapeño chile pepper, stemmed and halved

2 large cloves garlic

1 can (14½ ounces) no-salt-added stewed tomatoes
